I start with a thick pork chop and pound it thin, season it and bread with panko bread crumbs. These are extra crunchy and lend a wonderful texture to the dish. This is topped with sautéed mushrooms and zucchini. Accompanied with a lemon wedge for seasoning.
This comes with mini potatoes that have been boiled a bit, crushed a little to add surface area and then baked in a hot oven.
